Lunch Box: Dinosaur Egg Salad Sandwiches

There were many challenges that came along with distance learning during the COVID-19 shutdown, such as having to half listen to Zoom classes while getting my own work done and making sure all assignments were completed and submitted on time.

Another was trying to figure out what to make for lunch everyday. (There was a lot of SPAM musubis and instant ramen.)

But one fun lunch menu included dinosaur egg salad sandwiches with chips and fruits, which made a come back during the week following a COVID scare. Luckily we had boiled eggs from Easter.

Pressing a dinosaur cookie cutter into two slices of bread, I find it cuts cleaner when I press the cookie cutter into the bread while it’s on a flat surface, then pick it up to press my fingers along the edges until it cuts all the way through.

Egg salad is then scooped and spread carefully to fill little dinosaur arms, and the second bread is flipped over to top off the dinosaur sandwich.
